			- 8 oz rotini pasta
 - 1 cup cherry tomatoes, halved
 - 1 cup fresh basil leaves, chopped
 - 4 tbsp extra virgin olive oil
 - 2 tbsp aged balsamic vinegar
 - 2 cloves garlic, minced
 - Salt and pepper to taste
 - ¼ cup shredded Parmesan cheese (optional)
 
Instructions
- Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool.
 - In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper until emulsified.
 - In a large bowl, combine cooled pasta with cherry tomatoes and basil. Pour dressing over the salad and toss gently until evenly coated.
 - If using Parmesan cheese, sprinkle it on top and give it one final toss.
 - Allow the salad to chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
