  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 4 tbsp extra virgin olive oil
  • 2 tbsp aged balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • ¼ cup shredded Parmesan cheese (optional)

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper until emulsified.
  3. In a large bowl, combine cooled pasta with cherry tomatoes and basil. Pour dressing over the salad and toss gently until evenly coated.
  4. If using Parmesan cheese, sprinkle it on top and give it one final toss.
  5. Allow the salad to chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
