Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  4. Beat in eggs one at a time; fold in grated carrots.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Fold in raisins or walnuts if using.
  7. Drop rounded tablespoons of dough onto lined baking sheets.
  8. Bake for 12-15 minutes until edges are golden.
  9. Cool on the baking sheet for about 5 minutes before transferring to wire racks.
