- 1 cup diced onions
- 1 cup diced carrots

- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 1 cup sour cream (or Greek yogurt)
- 2 tsp dried thyme
- 2 tsp dried parsley
- 1 cup shredded sharp cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Season the chicken breasts with salt and pepper.
- In a large skillet over medium heat, melt butter and sauté onions, carrots, and celery until softened (about 5 minutes).
- Add minced garlic and the wild rice blend; stir until fragrant.
- Pour in chicken broth and bring to a simmer for about 20 minutes.
- In a bowl, mix together the cooked rice mixture with sour cream, thyme, parsley, and cheddar cheese. Transfer to a greased baking dish.
