  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 14.5 oz can diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • Tortilla strips (1 cup)
  • ½ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 avocado (optional)

Instructions

  1. Chop onion and mince garlic.
  2. In a large pot over medium heat, sauté onions in oil until translucent; add garlic and cook until fragrant (about 1 minute).
  3. Add chicken breasts and sear until golden brown on both sides (about 5 minutes each).
  4. Pour in diced tomatoes and chicken broth; stir in cumin and chili powder.
  5. Bring to a boil, then reduce heat and simmer uncovered for 20-30 minutes until chicken is cooked through.
  6. Remove chicken, shred it with two forks, and return to the pot. Mix well.
