  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 red bell pepper (diced)
  • 1 avocado (sliced)
  • 3 tbsp tahini
  • 1 tsp chipotle powder
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • ΒΌ cup fresh cilantro (chopped)
  • Salt & pepper to taste

Instructions

  1. Prepare the Quinoa: Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water or vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until fluffy.
  2. Chop Veggies: Dice cherry tomatoes, cucumber, and red bell pepper into bite-sized pieces. Slice avocado just before serving.
  3. Create Sauce: In a bowl, whisk together tahini, chipotle powder, lemon juice, olive oil until smooth. Adjust consistency with water as needed.
  4. Assemble Bowl: Fluff cooked quinoa and divide into bowls. Top with diced veggies and sliced avocado.
  5. Add Sauce & Garnish: Drizzle chipotle tahini sauce over the top and sprinkle with chopped cilantro before serving.
