  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2 large eggs, room temperature
  • ½ cup granulated sugar (for filling)
  • 1 tsp ground cinnamon (adjust to taste)
  • 2 tsp pure vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the texture resembles wet sand.
  3. Press the mixture evenly into the bottom of the prepared baking dish.
  4. In another bowl, beat cream cheese until smooth. Gradually add eggs, mixing well after each addition.
  5. Stir in granulated sugar, cinnamon, and vanilla extract until fully combined.
  6. Pour the cheesecake filling over the crust and spread evenly.
  7. Bake for about 30 minutes until set but slightly jiggly in the center.
  8. Allow to cool completely at room temperature before refrigerating for at least two hours. Dust with powdered sugar before slicing.
