  • 1/2 cup fresh lime juice (about 4 limes)
  • 1 cup full-fat coconut milk
  • 4 garlic cloves, minced
  • 2 tbsp honey
  • 1/4 cup low-sodium soy sauce
  • 1/2 tsp cayenne pepper
  • Zest of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the marinade by whisking together coconut milk, lime juice, garlic, honey, soy sauce, cayenne pepper, lime zest, salt, and pepper in a bowl.
  2. Marinate the chicken by placing it in a resealable bag with half of the marinade. Seal and refrigerate for at least 30 minutes or overnight.
  3. Preheat your grill to medium-high heat (375°F) or your oven to 400°F.
  4. Cook the chicken: Grill each breast for about 6-7 minutes per side until fully cooked (internal temperature of 165°F) or bake for 25-30 minutes in a greased dish.
  5. Let the chicken rest for five minutes before slicing and garnish with fresh cilantro.
