  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup freshly squeezed lime juice
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 cup bell peppers, chopped (variety of colors)
  • 1 cup carrots, sliced
  • 2 cups fish stock or broth
  • 2 tbsp fish sauce
  • 1 tsp chili flakes (or to taste)
  • 1 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the vegetables and mincing the garlic and ginger.
  2. In a large pot, heat olive oil over medium heat and sauté garlic and ginger until fragrant, about 1 minute.
  3. Add bell peppers and carrots; sauté until slightly softened, approximately 4-5 minutes.
  4. Pour in coconut milk and fish stock; bring to a gentle simmer.
  5. Add white fish fillets; poach for about 5-7 minutes until cooked through.
  6. Stir in lime juice and chili flakes before serving.
