  • 8 oz fusilli pasta
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp freshly squeezed lime juice
  • ¼ cup fresh cilantro, chopped (plus extra for garnish)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook the fusilli pasta in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. In a blender, combine avocados, lime juice, olive oil, salt, and pepper. Blend until smooth.
  3. Dice the cherry tomatoes and cucumber. Set aside some cilantro for garnish.
  4. In a large bowl, mix the cooked pasta with diced vegetables and avocado dressing until well combined.
  5. Taste and adjust seasoning if needed.
  6. Serve chilled or at room temperature; garnish with extra cilantro.
