- 8 oz fusilli pasta
- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 2 tbsp freshly squeezed lime juice
- ¼ cup fresh cilantro, chopped (plus extra for garnish)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Cook the fusilli pasta in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
- In a blender, combine avocados, lime juice, olive oil, salt, and pepper. Blend until smooth.
- Dice the cherry tomatoes and cucumber. Set aside some cilantro for garnish.
- In a large bowl, mix the cooked pasta with diced vegetables and avocado dressing until well combined.
