  • 2 lbs beef short ribs
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup heavy cream
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear short ribs until browned on all sides; remove and set aside.
  3. Add diced onions and minced garlic to the pot; sauté until onions are translucent.
  4. Pour in beef broth while scraping up brown bits from the bottom of the pot.
  5. Return short ribs to the pot, add thyme and rosemary, then pour in heavy cream and enough broth to cover.
  6. Cover and braise in the oven for 2-3 hours, or until meat is fork-tender.
  7. Remove from oven, discard herbs, adjust seasoning with salt and pepper, then serve hot over mashed potatoes or pasta.
