- 3–4 boneless skinless chicken breasts
- 3 cloves fresh garlic
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white rice
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
- Season both sides of the chicken breasts with salt, pepper, onion powder, and paprika. Arrange them in the prepared baking dish.
- In a medium saucepan over medium heat, sauté minced garlic in heavy cream until fragrant. Stir in chicken broth and simmer until slightly thickened.
- Pour the creamy sauce over the seasoned chicken. Cover with foil and bake for about 25 minutes or until cooked through.
- While the chicken bakes, prepare the white rice according to package instructions. Fluff once done.
- Allow the chicken to rest for 5 minutes before slicing. Serve over rice topped with generous amounts of creamy sauce.
