Instructions

  1. Prepare your ingredients: Wash and peel the potatoes, then cut them into even cubes.
  2. Crisp the bacon: Cook the diced bacon in a skillet over medium heat until crispy. Drain on paper towels and reserve some bacon fat.
  3. Sauté onions and garlic: In the same skillet with reserved fat, sauté the chopped onions for about 5 minutes until translucent. Add minced garlic and cook for another minute.
  4. Combine in the Crock Pot: Add cubed potatoes to the crock pot along with sautéed onions and garlic. Pour in chicken broth until everything is covered, then add cooked bacon bits.
  5. Cook: Cover and cook on low for 6-8 hours or high for 4 hours.
  6. Add creaminess: About 30 minutes before serving, stir in softened cream cheese until melted.
  7. Serve: Ladle into bowls and top with shredded cheddar cheese, sliced green onions, and a dollop of sour cream.
