  • 34 medium Russet Potatoes (about 2 lbs), peeled and cubed
  • 8 oz Cream Cheese, softened
  • 1 cup Sour Cream (full-fat)
  • 2 cups Shredded Cheddar Cheese (sharp)
  • 1/2 cup Butter, melted
  • 3 Green Onions, chopped
  • Salt & Pepper to taste
  • 1 cup Panko Breadcrumbs

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Boil peeled and cubed potatoes in salted water until fork-tender, about 15 minutes. Drain and set aside.
  3. In a mixing bowl, combine softened cream cheese, sour cream, melted butter, salt, and pepper; blend until smooth.
  4. Gently fold cooked potatoes into the creamy mixture until fully coated.
  5. Layer half of the potato mixture in the baking dish and sprinkle half of the cheddar cheese on top. Add the remaining potato mixture followed by the rest of the cheese.
  6. Top with panko breadcrumbs and bake for 30-35 minutes until golden brown.
