  • 1 teaspoon baking powder

  • 8 ounces softened cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 15×10-inch jelly roll pan and line it with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and sugar.
  3. In another bowl, beat eggs until fluffy, then add pumpkin puree and vanilla; mix until smooth.
  4. Gradually fold wet ingredients into dry ingredients until just combined.
  5. Pour batter into the prepared pan and spread evenly. Bake for about 15 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool slightly before rolling it up in a clean kitchen towel (parchment side out). Let cool completely.
  7. For the filling, beat softened cream cheese and powdered sugar until smooth. Spread over cooled cake and roll back up carefully.
