  • 1 whole chicken (45 pounds)
  • 6 cloves garlic, minced
  • 1/3 cup extra virgin olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 cups assorted vegetables (carrots, potatoes, onions), chopped
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and coat a roasting pan with nonstick spray or olive oil.
  2. Pat the chicken dry with paper towels; season generously inside and out with salt and pepper.
  3. In a bowl, mix minced garlic with rosemary, thyme, and olive oil to create a paste; rub all over the chicken.
  4. Toss chopped vegetables in olive oil, salt, and pepper; arrange them around the chicken in the roasting pan.
  5. Roast in preheated oven for about 1 hour and 20 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10 minutes before carving.
