Instructions
- Boil washed and quartered potatoes in salted water for 15-20 minutes until fork-tender. Drain and let steam escape for 5 minutes.
- Preheat oven to 425°F (220°C). On a lined baking sheet, gently smash each potato with a fork or masher.
- In a small bowl, mix minced garlic with olive oil; drizzle over smashed potatoes and season with salt and pepper.
- Bake for 25-30 minutes until golden brown and crispy. Sprinkle grated parmesan on top and return to the oven for another 5 minutes until melted. Garnish with parsley if desired.
