- 1 cup beer or apple cider for marinade
- 2 tbsp Dijon mustard
Instructions
- In a large bowl, mix beer or cider, Dijon mustard, minced garlic, salt, and pepper. Submerge the pork shoulder in the marinade for at least 4 hours or overnight.
- Preheat oven to 300°F (150°C). Heat olive oil in a skillet over medium-high heat. Sear each side of the marinated pork until golden brown (about 4-5 minutes per side).
- Place sliced onions in a roasting pan and scatter caraway seeds on top.
- Position the seared pork over the onions, cover with foil, and roast for 3-4 hours until fork-tender.
- Remove foil for the last 30 minutes of cooking; increase oven temperature to 425°F (220°C) for crispy skin.
- Let the roast rest for at least 15 minutes before slicing.
