  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 cup Greek yogurt
  • 1/2 cup honey (preferably pure)
  • 2 large eggs
  • 1 tsp ground cinnamon
  • Zest of 1 lemon
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Add cold butter and rub until crumbly.
  3. Gradually add ice water until dough holds together. Roll out and fit into a pie dish.
  4. In another bowl, whisk eggs until fluffy. Add Greek yogurt, honey, sugar, cinnamon, and lemon zest; mix until smooth.
  5. Pour filling into the crust and bake for 30-35 minutes until golden brown and set with a slight jiggle.
  6. Cool completely before slicing. Drizzle with additional honey before serving.
