  • 1 lb lean ground turkey
  • 2 medium zucchinis (sliced into half-moons)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 bell pepper (diced)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients: Wash and slice the zucchini, dice the onion and bell pepper, and mince the garlic.
  2. In a large skillet over medium heat, add olive oil. Once shimmering, sauté the onions and bell peppers until softened (about 5 minutes).
  3. Push veggies aside, add ground turkey, breaking it apart as it cooks until browned (6-8 minutes).
  4. Stir in zucchini, garlic, cumin, paprika, salt, and pepper. Cook until zucchini is tender but bright (4-5 minutes).
  5. Taste and adjust seasoning as desired before serving hot.
