Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup lukewarm water
  • 2 medium Russet potatoes (about 1 lb)
  • 1 cup cottage cheese (full-fat)
  • Salt and pepper to taste
  • 4 tbsp unsalted butter (for sautéing)
  • 1 medium onion (for sautéing)

Instructions

  1. Make the Dough: In a bowl, combine flour and a pinch of salt. Create a well in the center, add the egg, and gradually mix in lukewarm water until a dough forms. Knead lightly until smooth.
  2. Prepare Fillings: Boil peeled potatoes until tender, drain, and mash while warm. Mix with cottage cheese and season with salt and pepper.
  3. Roll Out Dough: On a floured surface, roll out portions of dough to 1/8 inch thick. Use a round cutter to cut circles.
  4. Fill Pierogi: Place about one tablespoon of filling in each circle's center, fold over, and pinch edges tightly to seal.
  5. Cook Pierogi: Bring salted water to boil; cook pierogi in batches until they float (about 3-5 minutes). Remove with a slotted spoon.
  6. Sauté Pierogi: In a skillet over medium heat, melt butter. Add cooked pierogi and sauté until golden brown on both sides (about 3-4 minutes per side).
