- 4 cloves fresh garlic, minced
- 1/3 cup raw honey
- 1/4 cup freshly squeezed lime juice (about 2 limes)
- 2 tbsp brown sugar
- 4 tbsp low-sodium soy sauce
- 2 tbsp vegetable oil
- 3 cups cooked rice (white or brown)
- 1 cup bell peppers, chopped
- 1/4 cup green onions, chopped
- Fresh cilantro (optional)
Instructions
- Dice the chicken into bite-sized pieces; mince garlic and squeeze lime juice.
- In a bowl, mix honey, lime juice, soy sauce, garlic, and brown sugar. Add chicken and coat well. Marinate for at least 30 minutes.
- Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes until golden brown.
- In the last few minutes of cooking, add bell peppers until tender-crisp.
- Spoon rice into bowls and top with the chicken mixture. Garnish with green onions or cilantro if desired.
