  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/3 cup raw honey
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 2 tbsp brown sugar
  • 4 tbsp low-sodium soy sauce
  • 2 tbsp vegetable oil
  • 3 cups cooked rice (white or brown)
  • 1 cup bell peppers, chopped
  • 1/4 cup green onions, chopped
  • Fresh cilantro (optional)

Instructions

  1. Dice the chicken into bite-sized pieces; mince garlic and squeeze lime juice.
  2. In a bowl, mix honey, lime juice, soy sauce, garlic, and brown sugar. Add chicken and coat well. Marinate for at least 30 minutes.
  3. Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes until golden brown.
  4. In the last few minutes of cooking, add bell peppers until tender-crisp.
  5. Spoon rice into bowls and top with the chicken mixture. Garnish with green onions or cilantro if desired.
