  6. If using, fold in chopped pistachios.
  7. Shape dough into two logs on prepared sheets and bake for 25-30 minutes until golden brown.
  8. Allow to cool for 10 minutes before slicing logs diagonally into ½-inch pieces.
  9. Return sliced biscotti to the oven cut-side up and bake for an additional 15-20 minutes until crisp.
