Description

  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • ¾ cup granulated sugar (adjust to taste)
  • 1 cup fresh lemon juice (about 45 lemons)
  • Zest of 2 lemons
  • 3 large eggs (room temperature)
  • 1 cup sour cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Press the mixture into the bottom of a pie dish.
  3. Bake the crust for about 10 minutes until golden brown. Let cool completely.
  4. In another bowl, whisk together lemon juice, lemon zest, eggs, sour cream, sugar, and vanilla until smooth.
  5. Pour the filling into the cooled crust and gently tap to remove air bubbles.
  6. Bake for 25-30 minutes until edges are set but center is slightly jiggly. Cool at room temperature before refrigerating for at least 4 hours or overnight.
  7. Serve chilled with whipped cream or fresh berries.
