- 1 ½ cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- ¾ cup granulated sugar (adjust to taste)
- 1 cup fresh lemon juice (about 4–5 lemons)
- Zest of 2 lemons
- 3 large eggs (room temperature)
- 1 cup sour cream
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Press the mixture into the bottom of a pie dish.
- Bake the crust for about 10 minutes until golden brown. Let cool completely.
- In another bowl, whisk together lemon juice, lemon zest, eggs, sour cream, sugar, and vanilla until smooth.
- Pour the filling into the cooled crust and gently tap to remove air bubbles.
- Bake for 25-30 minutes until edges are set but center is slightly jiggly. Cool at room temperature before refrigerating for at least 4 hours or overnight.
- Serve chilled with whipped cream or fresh berries.
