Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, combine maple syrup, Dijon mustard, olive oil, salt, pepper, and chopped herbs.
- Marinate the chicken in the mixture for at least 30 minutes.
- While marinating, cube the sweet potatoes evenly and toss them with olive oil, salt, and pepper on a baking sheet.

- Roast for 25–30 minutes until the chicken reaches an internal temperature of 165°F and sweet potatoes are tender.
