  • 4 cups fresh corn kernels (about 4 ears of corn)
  • 1/4 cup mayonnaise
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled Cotija cheese (or feta)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Grill or boil the corn until tender (about 10 minutes). Allow to cool.
  2. Cut the kernels off the cob and place them in a large mixing bowl.
  3. In a separate bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  4. Fold the dressing into the corn until well combined.
  5. Gently mix in Cotija cheese and cilantro.
