  • 1 lb ground beef or turkey
  • 1 medium onion (diced)

  • 1 cup diced tomatoes
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup plain Greek yogurt
  • Juice of 1 lime
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant. Add the ground meat and cook until browned.
  4. Stir in the diced tomatoes, chili powder, cumin, salt, and pepper; simmer for about 5 minutes.
  5. Fill each zucchini half with the meat mixture and top with shredded cheese.
  6. Place them in the oven and bake for 20-25 minutes until tender and golden.
  7. For the yogurt sauce, combine Greek yogurt, lime juice, and chopped cilantro in a bowl.
