  • 1 cup whole milk
  • 1 cup grated cheddar cheese
  • 1 cup chopped vegetables (spinach, bell peppers, or mushrooms)
  • ½ cup cooked bacon or diced ham
  • 2 tbsp fresh herbs (parsley or thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin with nonstick spray or butter.
  3. In a bowl, whisk together eggs and milk; season with salt and pepper.
  4. Fold in cheese, chopped vegetables, meat (if using), and herbs.
  5. Fill each muffin cup about three-quarters full with the mixture.

  7. Let cool slightly before removing from the tin.
