Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 3 garlic cloves, minced
  • Juice of 1 lemon (about 3 tbsp)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup full-fat Greek yogurt
  • 2 tbsp chopped fresh parsley or cilantro

Instructions

  1. In a bowl, mix cumin, coriander, paprika, garlic, lemon juice, olive oil, salt, and pepper to create a marinade.
  2. Place salmon in a shallow dish and coat evenly with the marinade. Refrigerate for at least 30 minutes.
  3. Preheat oven to 400°F (200°C).
  4. Arrange marinated salmon on a lined baking sheet skin-side down. Bake for 12-15 minutes until cooked through.
  5. In another bowl, combine Greek yogurt with lemon juice and chopped herbs. Season with salt.
  6. Serve salmon topped with lemon yogurt sauce and garnished with extra herbs.
