- 9 lasagna noodles
- 2 cups fresh spinach
- 1 cup sliced cremini mushrooms
- 1 cup whole milk ricotta cheese
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 large egg, beaten
- Salt and pepper to taste
- 2 cups marinara sauce
Instructions
- Cook lasagna noodles in salted boiling water until al dente (8-10 minutes). Drain and lay flat on parchment paper.
- In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add mushrooms and spinach. Cook until softened.
- In a bowl, mix ricotta, sautéed veggies, beaten egg, half of the mozzarella, salt, and pepper.
- Spread filling along each noodle and roll tightly. Place seam-side down in a baking dish.
- Preheat oven to 375°F. Pour marinara sauce over the rolls and top with remaining mozzarella. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10-15 minutes until golden.
