  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup sliced cremini mushrooms
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 large egg, beaten
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Cook lasagna noodles in salted boiling water until al dente (8-10 minutes). Drain and lay flat on parchment paper.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add mushrooms and spinach. Cook until softened.
  3. In a bowl, mix ricotta, sautéed veggies, beaten egg, half of the mozzarella, salt, and pepper.
  4. Spread filling along each noodle and roll tightly. Place seam-side down in a baking dish.
  5. Preheat oven to 375°F. Pour marinara sauce over the rolls and top with remaining mozzarella. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10-15 minutes until golden.
