  • 1 lb gnocchi (store-bought)
  • 1/2 cup freshly squeezed lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 2 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 2 cups fresh spinach or kale
  • 1/2 cup grated Parmesan cheese

Instructions

  5. Finish with greens & cheese: Stir in spinach or kale during the last minute of cooking until wilted. Sprinkle with Parmesan before serving.
