  • 24 peppermint kisses (for topping)

Instructions

  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt until combined.
  3. In another large bowl, mix sugar and vegetable oil until well combined. Add eggs one at a time, mixing well after each addition. Stir in red food coloring and peppermint extract until smooth.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined—avoid over-mixing for tender cookies.
  5. Scoop tablespoon-sized portions of dough onto prepared sheets about 2 inches apart. Bake for 10-12 minutes until edges are set; centers should remain soft.
  6. Press a peppermint kiss into the center of each cookie while still warm. Allow to cool on the baking sheet for 5 minutes before transferring to wire racks.
