  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 tsp peppermint extract
  • Red and green food coloring (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  3. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  4. Gradually mix in the flour, baking soda, and salt until just combined.
  5. Divide the dough in half; leave one half plain and add food coloring to the other half to create desired color swirls.
  6. Roll both halves into logs, twist them together gently, then slice into 1/2-inch thick cookies.
  7. Place on prepared baking sheets and bake for 10-12 minutes until edges are golden but centers remain soft.
  8. Cool on the sheets for 5 minutes before transferring to wire racks.
