Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In one bowl, mix pumpkin puree, granulated sugar, eggs, milk, and vanilla until smooth.
- In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt. Fold into the wet mixture until just combined.
- In a separate bowl, blend cream cheese and powdered sugar until creamy.
- Pour half the muffin batter into each muffin cup. Add about 1 tablespoon of cream cheese filling on top and cover with remaining batter.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
