  • 1 cup canned pumpkin puree
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs (room temperature)
  • ⅓ cup whole milk
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In one bowl, mix pumpkin puree, granulated sugar, eggs, milk, and vanilla until smooth.
  3. In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt. Fold into the wet mixture until just combined.
  4. In a separate bowl, blend cream cheese and powdered sugar until creamy.
  5. Pour half the muffin batter into each muffin cup. Add about 1 tablespoon of cream cheese filling on top and cover with remaining batter.
  6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
