  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 3 large eggs
  • 2 tbsp red gel food coloring
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs and sugar until light and fluffy. Mix in oil, buttermilk, vanilla extract, and red food coloring until smooth.
  4. Gradually fold the dry mixture into the wet mixture without overmixing.
  5. Pour batter into the prepared pan and spread evenly. Bake for 12-15 minutes or until a toothpick comes out clean.
  6. While warm, invert the cake onto a clean kitchen towel dusted with powdered sugar and roll it up tightly.
  7. Allow to cool completely before unrolling and spreading with cream cheese frosting; then roll it back up.
