  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 tbsp red food coloring (gel)
  • For Frosting: 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tbsp lemon juice or vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix the oil, sugar, eggs, buttermilk, food coloring, and vanilla until smooth.
  4. Gradually combine the wet and dry ingredients until just mixed; avoid overmixing.
  5. Fill cupcake liners two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Let cool completely before frosting.
  7. For the frosting, beat cream cheese and butter until fluffy. Gradually add powdered sugar and mix in lemon juice or vanilla extract.
