  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 cup mixed berries (strawberries & blueberries)

Instructions

  1. Preheat your oven to 325°F (160°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of the prepared dish.
  3. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and sour cream; mix well. Incorporate eggs one at a time followed by vanilla extract until creamy.
  4. In a saucepan over medium heat, cook berries until soft and mash slightly for swirls.
  5. Pour half of the cheesecake mixture over the crust, drizzle with berry mixture, then add remaining cheesecake batter. Swirl gently.
  6. Bake for 40-45 minutes until edges are set but center is slightly wobbly. Cool completely and refrigerate for at least three hours before serving.
