- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar (divided)
- 16 oz cream cheese, softened
- 1 cup sour cream
- 3 large eggs (room temperature)
- 2 tsp vanilla extract
- 1 cup mixed berries (strawberries & blueberries)
Instructions
- Preheat your oven to 325°F (160°C) and line an 8×8-inch baking dish with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of the prepared dish.
- In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and sour cream; mix well. Incorporate eggs one at a time followed by vanilla extract until creamy.
- In a saucepan over medium heat, cook berries until soft and mash slightly for swirls.
- Pour half of the cheesecake mixture over the crust, drizzle with berry mixture, then add remaining cheesecake batter. Swirl gently.
- Bake for 40-45 minutes until edges are set but center is slightly wobbly. Cool completely and refrigerate for at least three hours before serving.
