  • 4 cups butternut squash, diced
  • 2 tablespoons extra virgin olive oil
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 8 fresh sage leaves, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the butternut squash into bite-sized pieces.
