  • 2 skinless salmon fillets (6 oz each)
  • 1 sheet store-bought puff pastry
  • 1 cup fresh spinach (or 1/2 cup frozen, thawed and drained)
  • 4 oz cream cheese
  • 1 small onion, chopped
  • Zest of 1 lemon
  • 1 tbsp fresh dill (or to taste)
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté chopped onion until translucent. Add spinach and cook until wilted. Stir in cream cheese until melted. Season with salt, pepper, lemon zest, and dill.
  3. Roll out the puff pastry on a floured surface until thin. Place one salmon fillet in the center, top with the spinach mixture, then place the second fillet on top.
  4. Fold the pastry edges over the salmon and seal with a fork. Brush with beaten egg for a golden finish.
  5. Bake for 25-30 minutes or until golden brown. Let it rest before slicing.
