  • ¼ cup granulated sugar
  • 1 teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup warm milk (110°F/43°C)
  • 2 large eggs
  • 4 fresh sage leaves, chopped
  • ¼ cup honey (for drizzling)
  • Sea salt flakes (for topping)

Instructions

  1. Activate Yeast: In a bowl, combine warm milk, active dry yeast, and 1 teaspoon sugar. Let sit for 5-10 minutes until frothy.
  2. Create Dough Base: In a large bowl, mix flour, remaining sugar, and salt. Add yeast mixture and beaten eggs; mix until combined.
  3. Knead Dough: Transfer to a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Incorporate Butter & Sage: Gradually add softened butter and chopped sage to dough while kneading until well mixed.
  5. First Rise: Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm spot until doubled in size (1-2 hours).
  6. Shape Rolls: Punch down risen dough, divide into about 12 pieces, shape into balls, and place in a greased baking dish.
  7. Second Rise: Cover rolls; let rise again for about 30 minutes while preheating oven to 375°F (190°C).
  8. Bake & Brush: Bake for 20-25 minutes until golden brown. Brush with melted butter mixed with honey immediately after baking.
