  • 1 sheet puff pastry (thawed)
  • 8 oz brie cheese (cut into small pieces)
  • 1 cup fresh cranberries (chopped)
  • 2 tbsp granulated sugar
  • 1 tsp fresh thyme leaves
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Roll out the puff pastry to about 1/8 inch thick and cut into 3-inch circles.
  4. Place the circles on the baking sheet and make a small indent in the center of each.
  5. In a bowl, mix chopped cranberries, sugar, and thyme leaves.
  6. Place brie pieces in the indents and top with cranberry mixture.
  7. Brush the edges with egg wash.
  8. Bake for 20-25 minutes or until golden brown.
