  • 2 tbsp chipotle peppers in adobo sauce
  • 1 cup fresh cilantro, chopped
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh lime juice
  • 1 cup cooked rice or quinoa (your choice)
  • 1 can (15 oz) black beans, drained and rinsed

Instructions

  2. Heat skillet over medium-high heat. Season flank steak with salt and pepper; sear for 4-5 minutes per side until browned.
  3. Mix chipotle peppers and adobo sauce in a bowl. Brush onto the steak during the last minute of cooking.
