  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups mixed fresh greens (romaine and spinach)
  • 1 cup bell peppers (sliced)
  • 1 cup carrots (shredded)
  • 1 cup cucumber (sliced)
  • 3 tbsp sesame oil
  • 3 tbsp rice vinegar
  • 2 tbsp honey or agave syrup
  • 3 tbsp soy sauce (low-sodium)
  • 2 garlic cloves (minced)
  • 1-inch piece fresh ginger (grated)
  • 2 tbsp toasted sesame seeds

Instructions

  1. Wash and chop the greens and vegetables into bite-sized pieces.
  2. Season chicken breasts with salt and pepper. Heat oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, until golden brown and reaching an internal temperature of 165°F.
  3. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey/agave syrup, minced garlic, and grated ginger until smooth.
  4. In a large bowl, combine the chopped greens and sliced vegetables. Add sliced chicken and drizzle with dressing; toss gently to coat.
  5. Sprinkle toasted sesame seeds on top before serving.
