- 2 (6 oz) salmon fillets, skin-on
- 8 oz large shrimp, peeled and deveined
- 1/2 cup plain breadcrumbs
- 4 oz cream cheese, softened
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp extra virgin olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix chopped shrimp, cream cheese, breadcrumbs, garlic powder, parsley, lemon juice, salt, and pepper until well combined.
- Place salmon fillets skin-side down on a cutting board and cut pockets into each fillet.
