  • 2 (6 oz) salmon fillets, skin-on
  • 8 oz large shrimp, peeled and deveined
  • 1/2 cup plain breadcrumbs
  • 4 oz cream cheese, softened
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix chopped shrimp, cream cheese, breadcrumbs, garlic powder, parsley, lemon juice, salt, and pepper until well combined.
  3. Place salmon fillets skin-side down on a cutting board and cut pockets into each fillet.
  4. Generously fill each pocket with the shrimp mixture and drizzle olive oil on top.
  5. Bake on a lined baking sheet for 20-25 minutes or until the salmon flakes easily with a fork.
  6. Allow to rest for a few minutes before serving with lemon wedges.
