  • 2 lb pork loin
  • 1 cup fresh cranberries
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 1/3 cup brown sugar
  • 2 tbsp Dijon mustard
  • 1 cup low-sodium chicken broth
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 tbsp olive oil (for searing)

Instructions

  1. Heat olive oil in a skillet and sear the pork loin on all sides until golden brown.
  2. Place the seared pork loin in the slow cooker and scatter chopped onions and minced garlic around it.
  3. In a bowl, mix fresh cranberries, brown sugar, Dijon mustard, chicken broth, cinnamon, and nutmeg until well combined.
  4. Pour the cranberry mixture over the pork loin. Cover and cook on low for 6-8 hours or high for 4-5 hours until tender.
  5. Slice the pork loin and serve with cranberries on top.
