  • 1 cup bell peppers (red and yellow), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup ketchup
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar

Instructions

  1. In a skillet over medium heat, sauté the diced onion and minced garlic until translucent (about 3-4 minutes).
  2. Transfer the sautéed onion and garlic to the slow cooker. Add the pork, bell peppers, pineapple chunks, ketchup, soy sauce, brown sugar, and rice vinegar. Stir well to combine.
