  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
  • 1 cup long-grain rice
  • 2 cups chicken broth or water
  • 1 cup shredded cheddar cheese
  • 2 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients: Slice the smoked sausage into bite-sized pieces; dice the onion and bell peppers.
  2. Sauté the veggies: In a large skillet over medium heat, heat olive oil. Add onions and bell peppers; sauté for about 5 minutes until soft.
  3. Brown the sausage: Add the chopped sausage to the skillet; cook until golden brown.
