  • 2 cups zucchini, sliced
  • 1 large Vidalia onion, chopped

  • 2 cups sharp cheddar cheese, shredded

  • 2 large eggs, beaten
  • 1/2 cup seasoned breadcrumbs
  • 2 tablespoons unsalted butter (plus extra for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt the butter. Sauté the onion and garlic until fragrant (about 5 minutes).
