  • 1 can (400ml) full-fat coconut milk
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1-inch piece fresh ginger, minced
  • 2 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 2 tbsp curry powder
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  1. In a large pot, heat oil over medium heat. Sauté diced onion until translucent. Add minced garlic and ginger; cook until fragrant.
  2. Stir in cubed sweet potatoes and curry powder, mixing well for about 2 minutes.
  3. Pour in coconut milk and vegetable broth, bringing the mixture to a gentle boil. Reduce heat and let simmer.
  4. After 15 minutes or when sweet potatoes are tender, add spinach or kale until wilted. Simmer for an additional 5 minutes.
