Description

  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 1 cup pumpkin puree
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs and melted butter until it resembles wet sand. Press firmly into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until combined. Stir in eggs one at a time, followed by pumpkin puree, cinnamon, nutmeg, and vanilla until fully blended.
  4. Pour half of the pumpkin filling over the crust. Dollop spoonfuls of remaining filling on top and swirl gently with a knife.
  5. Bake for 30-35 minutes or until slightly jiggly in the center. Let cool completely before refrigerating for at least two hours before slicing.
