  • 12 lasagna noodles (traditional or no-boil)
  • 6 ripe tomatoes, chopped
  • 1 cup ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese (whole milk)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil (extra virgin)
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onions in olive oil until translucent. Add minced garlic and cook until fragrant.
  3. Stir in chopped tomatoes with salt and pepper; simmer for about 15 minutes until thickened.
  4. In a bowl, mix ricotta with half of the Parmesan and chopped basil.
  5. Spread some sauce on the bottom of a baking dish; layer noodles, cheese mixture, sauce—repeat until all ingredients are used.
  6. Top with remaining mozzarella and Parmesan; cover with foil and bake for 25 minutes.
  7. Remove foil and bake for an additional 15-20 minutes until bubbly. Let rest for 10 minutes before serving.
