- 12 lasagna noodles (traditional or no-boil)
- 6 ripe tomatoes, chopped
- 1 cup ricotta cheese (whole milk)
- 2 cups shredded mozzarella cheese (whole milk)
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil (extra virgin)
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, sauté onions in olive oil until translucent. Add minced garlic and cook until fragrant.
- Stir in chopped tomatoes with salt and pepper; simmer for about 15 minutes until thickened.
- In a bowl, mix ricotta with half of the Parmesan and chopped basil.
- Spread some sauce on the bottom of a baking dish; layer noodles, cheese mixture, sauce—repeat until all ingredients are used.
- Top with remaining mozzarella and Parmesan; cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 15-20 minutes until bubbly. Let rest for 10 minutes before serving.
